MAD Meatballs

1 pound of hamburger

1 tsp garlic powder

1/2 tsp garlic salt

1 tsp onion powder

1 tsp black pepper

1 tsp salt

1 egg

1/2 cup bread crumbs

1/3 cup milk

1/4 cup Parmesan cheese

1/3 cup shredded sharp cheese

3 tbsp MSH relish

You can use your bare hands but please wear gloves if feeding those other than your own family.  Place hamburger in a bowl and mix all the spices into the meat really well.  Now add the egg and again mix well. Toss in milk, bread crumbs, both cheeses and MSH relish.   You can make the meatballs now or cover the bowl with saran wrap and place in the fridge overnight allowing all the flavors to meld together (this is how I do mine).  Heat your oven to 350.  Roll meatballs into 1 1/2 " rounds and place on a baking sheet. Bake 13 minutes, then turn your sheet pan around and cook another 13 minutes for 26 minutes total.  



MAD Sweet Corn Relish

3 ears of Sweet Corn - boiled 7 minutes and removed from the cob

1/2 tsp chopped fresh Cilantro

2 TBSP. MSH Relish

Mix all ingredients together and refrigerate for at least 2 hours


MAD Stuffed Jalapenos

24 Jalapenos - washed, topped, cleaned out and split in half

1 brick of Cream Cheese

1 pound of Sausage (use your favorite)

3 TBSP. MSH Relish - use less if you don't want too much heat

1/4 tsp. black pepper

Cook the sausage till brown, breaking it into small pieces then

add in the cream cheese until melted.  Add in the pepper and MSH Relish.

Fill the jalapeno halves with the mixture and top with shredded Parmesan cheese and panko bread crumbs.

Bake 375 for 20 minutes. 

These can be served hot, or cold


MAD Quiche


Single pie crust

6 large eggs

1 tbsp unsalted butter 

1/4 cup diced onion

3 tbsp MAD SWEET HEAT - Relish or Slices

2 cups heavy cream

1/2 pound bacon, cooked and crumbled

1 cup of shredded cheese - your choice

1/4 tsp. salt

1/4 tsp. pepper

Directions -

Preheat oven to 425 degrees then reduce to 325.

Bake a 9" pie crust at 325 until edges are light brown approximately 12 minutes.  In a large skillet cook bacon, set aside after draining off most of the bacon grease. Now add in the skillet butter, add onion, salt , pepper and cook approximately 5 minutes.  In a medium bowl whisk together eggs, cream.  Then add onions, bacon, cheese and MAD SWEET HEAT.  Pour into pie crust and bake 45-50 minutes.  You can cover the crust with aluminum so it doesn't burn.  Serve with fresh fruit and muffins.


MAD Egg Salad


6 large boiled eggs, peeled and chopped

1/4 cup of mayonnaise

1/2 tsp. Dijon mustard

2 heaping tablespoons MAD SWEET HEAT

Salt / Pepper 

Bread (try it toasted)

Add garnishments such as lettuce, tomato slices, onion


Directions -

In a medium bowl combine eggs, mayonnaise, Dijon mustard, MAD SWEET HEAT, salt/pepper to taste. Mix gently.

Spread egg salad on fresh or toasted bread.  Top with garnishments. 


MAD Burritos


2 cooked chicken breasts (shredded)

4 flour tortillas

Salt / Pepper

1/4 cup of finely diced onions

1/2 cup sour cream

3 tablespoons of MAD SWEET HEAT

Shredded cheese, lettuce and tomato


Directions -

Place warm shredded chicken in a bowl.  Fold in salt/pepper, onion, sour cream and MAD SWEET HEAT.  Heat flour tortilla and fill with chicken mixture. Top with garnishments as desired.


MAD Pulled Pork Roast

5-8 pound pork shoulder roast

3 t packed light brown sugar

1 tbsp salt

2 tsp of pepper

1/4 tsp of cayenne pepper 

2 tablespoons canola oil

2 1/2 cups water

3 tbsp of MAD SWEET HEAT


Directions -

Place pork roast in a medium bowl (set aside).  In a small bowl combine brown sugar, salt/pepper and cayenne pepper. Take spices and rub into the pork roast thoroughly. Cover and refrigerate overnight. Preheat oven to 320 degrees. Remove pork roast from the refrigerator and bring to room temperature.  Sear pork roast in a large pan until brown (5 minutes both sides).  Place roast in a baking dish, fat side up add 2 1/2 cups of water; top with MAD SWEET HEAT and cover.  Every 2 hours remove pork roast from the oven and baste with  juices from the pan.  After 6 hours remove from the oven and allow meat to rest for 20 minutes then serve.


MAD Cheese Ball

1 brick of cream cheese

1 small can of crushed pineapple

4 Slices of Bacon

3 tbsp of MAD SWEET HEAT Relish


Directions -

Place the cream cheese in a mixing bowl.  Add MAD SWEET HEAT Relish and mix well.  Drain 1 small can of crushed pineapple (squeeze out all of the juice) use only half of the drained Pineapple; unless of course you really love pineapple then go ahead and add it all! Chop the bacon very fine. Toss the pineapple and bacon into the mixer with the cream cheese and MSH relish.  Scoop out the mixture (which will be soft) onto a piece of plastic wrap and shape into a ball then wrap it up tight.  Refrigerate for 4 hours or overnight if you can.  Enjoy with your favorite chips or crackers!


MAD Cranberry Sauce


1- 12 oz. bag fresh cranberries cleaned and sorted 

3/4 cup raw sugar

1/4 tsp cinnamon

1/3 cup orange juice

4 oz. MAD SWEET HEAT candied jalapeno relish

Directions -

Combine orange juice, sugar and cinnamon in a medium saucepan.  Heat over medium high heat until sugar is dissolved and the liquid hot.  Add cranberries and simmer for 10-12 minutes.  Continue to stir until cranberries are split and broken down.  Remove from  heat and allow to cool.  Take 1/2 of the cranberry sauce a put into a food processor until semi-smooth.  Combine the remaining ingredients with MAD SWEET HEAT candied jalapeno relish and stir well.  Refrigerate for a minimum of 2 hours, preferably overnight.

 MAD Jarlsberg Dip

1 - wedge of Jarlsberg Cheese - Shredded

3 - thin slices of red onion, minced 

3/4 cup Hellman's Mayo

A dash of garlic powder

2-3 tbsp MAD SWEET HEAT candied jalapeno relish

Directions -

Mix all ingredients together and serve with your favorite crackers
